Rainbow Cupcakes!
So for this blog I decided to make one of the easiest, fluffiest and cute cupcakes.
Its great to make for kids plus you can eat it on its own! No icing needed. It's that delicious!

Well, mine is more of a semi rainbow as I had small liners and only 4 colors fit but if your using the 6oz cupcake liners you might be able to squeeze in 6-7 colors in there! Plus I only had these colors in my fridge.
But basically rainbow cupcakes are called this simply by color, the base is usually a yellow cake batter. So for this cupcake we will be needing:
7 Tablespoons Butter approx 98g |
1 1/4 C Flour, 1 Tsp Salt, 1 Tsp Baking Powder |
3/4 C White Granulated Sugar |
2/3 C Milk |
2 Whole Eggs |
Food Color of Choice |
1 teaspoon baking powder
1 teaspoon salt
7 tablespoons butter (approx 98g)
3/4 C Sugar
2 eggs
2/3 C Milk
1 teaspoon Vanilla extract (sorry don't have photo of it! haha)
Procedure:
Preheat Oven to 350deg Fahrenheit
Cream the Butter and Sugar Together.
once the butter and sugar are creamed and turned quite pale in color, Add the eggs one at a time. |
Remember! Scrape the bowl down from time to time so all the ingredients are dissolved and mixed together evenly! |
Now add your dry and wet ingredients. Dry are your Flour, Baking Powder and Salt, Wet is your milk. alternating them in 3 parts, starting with the Dry Ingredients.

Once everything is incorporated, you divide your batter to make colored batters.
Once you've mixed the colors spoon them in by layer.Fill to the top. This is a smooth batter when baked. Meaning the surface should be quite flat not like a muffin.

And trust me, this is good on its own!
