Kebabs for 2... or 1 (Chicken Kebabs with Garlic Yogurt Sauce)

Hello Foodfoolers!

I know, i know its been a while. not just days, weeks, but months! So I've decided to put the hiatus off and were back with a recipe!

Life has just been filled with food and now its getting quite tighter, so a breathe of fresh air and a smell of fresh lime juice, I decided to replicate (well almost replicate) these Chicken Kebabs I made on my birthday last April. Not something we usually see in the typical Filipino birthday celebration (which consists of Sweet Spaghetti, fried chicken, maybe hotdog with marshmallows and a cake from Goldilocks or red ribbon.. yes we are weird)
The millennial however would opt for drinks somewhere in the south (Makati, BGC) or have a cake from Estrels or a customized fondant cake. However it is, we are breaking the stereotype here people! But these kebabs aren't just for birthdays. Its whenever you damn want it!!


So here is what you'll be needing:

200g (around 1 1/2 Cups or 2 pcs) Chicken fillets. skin off and cubed
Marinade for Chicken:
1/2 tsp Paprika
1/2 tsp Cayenne Pepper
1/8 tsp or a pinch of Cumin (can omit if you don't like the taste)
1/2 tsp Salt
1 tsp Lime Juice


1 big white onion cubed (you'll get around 4 pcs)
1 bell pepper cubed (you'd get around 12 pcs)
3pcs tomatoes wedged (you'll get 4pcs each tomato)
3 cloves of garlic

Basting Oil
1 tsp Paprika
1/4 c of Vegetable Oil/Canola Oil
A pinch of Salt

Yogurt Sauce:
1/2 Cup of Plain Yogurt
1 tsp of Lime Juice
1/8 tsp of freshly grated garlic
a pinch of Cumin

Couscous (optional)

First Marinade your Chicken

 


i used chicken tenders cause that was the only cut available n my fridge!

Sprinkle the Paprika, Cayenne, Cumin, Salt and Lime juice on your chicken and let the marinade work while in the refrigerator for an hour or 2.

After an hour or 2, we can assemble the kebabs. I find putting the onion on the first end will just hold the kebab altogether. alternate your vegetables with the chicken til you fill the stick.

Now chop your garlic finely and add salt bit by bit till it becomes quite soft and pasty.
Rub this all over your kebabs.

It should look like this.



For the Basting Oil just combine all the ingredients and set aside for grilling.

Make sure your grilling pan is smoking before you put in the kebabs. This will taste even better if you grill them on charcoal. I just had to use the grilling pan as i don't have a backyard with a barbecue!

 turn every 1-2 mins and bast with the paprika oil every time you turn the kebabs. Cook til you get some char bits on the sides and just keep turning til the chicken is cooked. A good tip for more flavor, try and get the vegetables soft and char it'll add depth to the taste.

(optional) While cooking the kebabs get some water boiling for the cous cous. Just follow the recipe on the packet how to make it. I added some salt, lime juice and golden raisins to my cous cous.



Lightly fluff the cous cous when its ready.

Sorry I don't have photos of the Garlic sauce but its too damn simple!
Combine the yogurt, garlic and lime juice. Mix well and set aside.


Once the kebabs are done, take a big plate, or clean wooden chopping board, place the cous cous all over, then rest the kebabs on the cous cous, wedge of limes on the side, and drizzle the yogurt sauce on top and Voila! easy chicken kebabs for all occasions!

you can garnish the plate with almost anything green, I used Leeks today as we have an abundance of it in the kitchen, but I do love coriander leaves, just makes the dish fresh with a Caribbean/Mexican cuisine vibe.
