Pixie Dust and Sugar Mountains!

Buon Pomerrigio everyone! (Hope my Italian is right? heehee)

Okay, so just decided to make a quick blog. The "BER"months are such a big thing in the Philippines just because once September comes everyone gets all giddy with the Christmas Holidays. What to buy, gifts they might or want to receive. I will not be surprised if some are already doing their secret Santa's! That's how Pinoy's love their Christmas!

So in honor of that excitement and weirdness (kinda!lol!) I decided to give out some nice treats recipes time to time until December to make to give out to your office mates, friends or loved ones just a random act of kindness in Holiday Spirit!

And what else is better than Hokey Pokey!

It's light weight, can be chewy, crunchy, oh so sweet. and it looks so scrunchy yet so elegant. whenever you crack them they give out those caramel pixie dust and they look like mountains that's why I called this blog post Pixie Dust and Sugar Mountains! Its also a great gift!

So you'll be needing:








110g Caster Sugar
3 Tablespoons Golden Syrup (can substitute with Corn Syrup)
1 Teaspoon Baking Soda

All you have to do is mix the sugar and golden syrup in a sauce pan and over medium heat let it boil until it reaches a hard crack stage or known as caramel stage. on a candy thermometer it reads 160degC.

One way to know is dip a spoon in the hot sugar and put it in cold water. if it cracks when you bash it on a hard surface or if you bite it then its ready!

Quickly add the baking soda to the sugar and stir swiftly. this will puff up in size immediately.

Place it on grease proof paper or if you have one of those silicone mats place it there and leave it to cool. sorry i forgot to take pictures of this step I'm sorry!

once the mixture is thoroughly cooled, try knocking on it and if its hard you can crack it into little chips of gold!
