Craving Shrimp

Thank Goodness it's Friday!!!

And something special always comes with Friday and with payday just around the corner. Living in the city is so convenient yet always comes with a price. Seafood can be a pain for you pocket but it wouldn't hurt if you indulged every once in awhile. Now, craving shrimp isn't just eating cooked shrimp seasoned with salt and pepper. I'm craving the one thing I always order at Panda Express back in the US. That is the Honey Walnut Shrimp! As for a trend its more skinnier as using less mayonnaise and less breading but basically without compromising the taste. Depending on hunger or how big of an eater you are this recipe is trimmed down to one to two persons. Who am I kidding! I ate all of it! Pair it with a salad (i do not recommend this! haha) or with yang chow fried rice or chow mien and Friday lunch is in commence!


What you will need:

9 pcs. of shrimp, peeled and de-veined
3 tbsp sugar
2 tsp Water
4 generous amounts of Walnuts roughly chopped or halves if you like a good bite!

2 tbsp Light Mayonnaise
1 tbsp honey
1 tbsp lemon juice
1 tbsp condensed milk
1 egg white (if your OCD kicks in 1/2 an egg white!)
5 tbsp Cornstarch
Oil for frying
salt to taste







 its kind of obvious that use the fresh catch of the day! you have to peel the skin off, de-vein by making a slit at the back of the shrimp and take out the black sack (which is their intestines eew! haha) and you got yourself proper and clean shrimp!







 Set it aside in the fridge for now. Lets make the sugar walnuts first. Its similar to a brittle. nothing fancy.

in a pan put your water and sugar. once all bubbly and looks like syrup add your walnuts than cook until brown. Nothing should smell burnt unless, yes, you know its burnt!



 once brown set it on wax paper or nonstick paper or a silpat if you have one then let it cool til its rock hard. break into pieces set it aside.

making the coating is easy! all you have to do is dunk all ingredients and mix til everything is well blended.

 


put all your clean shrimp in the egg white then dip it in cornstarch. Fry until golden brown.






Once the frying is done. heat up a pan add your shrimps, coating mixture then the walnuts cook until everything is incorporated and looks creamy and dreamy!

and voila garnish with a lemon wedge some parsley and some salad greens and you should get something like this!



Devoured in less than 3 minutes!! Delish!!
