A Lemon Chicken Craving...

What a Splendid 4-day vacation it was don't you think?

Lets not talk about my vacation though as I could go on for hours about it! But nonetheless, as promised, a new recipe!







 I was craving Lemon Chicken again so I decided to make it today! This recipe is also a favorite in the house, and has bumped into our Home Best Sellers! So I'm glad to share this with you!













Here it goes, you'll be needing:

3/4 kilo of chicken (boneless, approx. 14 medium sized pieces of chicken)
1 egg
2 tsp soy sauce
a pinch of pepper
6 tbsp cornstarch

for the sauce (coating)
2 round slices of lemon
juice of a half lemon
3 tbsp sugar
140ml chicken broth
2 tsp cornstarch, diluted in cold water

Palm Oil for frying

in a bowl, place your chicken, egg, soy sauce and pepper let it marinade for at least 20-25 minutes. I'm using chicken, bone-in, but its more better to use boneless chicken!

while the chicken is marinating, in a pot mix the chicken broth, sugar, lemon and lemon juice. place on the stove and bring to a boil.

now, in a deep stock pot, add your oil good for deep frying, it must be 350deg F good for frying.
once your oil is good to go, coat your chicken one by one with cornstarch, tap off the excess cornstarch.

deep fry for about 4-6 minutes til golden brown.


once the sauce is boiled, add the cornstarch, then stir, once it coats the back of the spoon turn off the heat, let it rest for 5 minutes then take out the lemon slices.

Coat your chicken generously with the sauce and voila! Lemonok is served!

Chinese Food aint complete without a parsley garnish! hehe
